This Caprese Breakfast Tart is a won- derful option as a slice and share meal that everyone is going to love. The classic flavors of tomato, cheese and fresh basil works so well together, so well in fact that there is no need
to add to it or make it any more complicated, (if it’s not broken, don’t fix it).
This simple, yet impressive breakfast dish can be served either hot or cold...Whichever way it will be gone before you know it.
Line a baking tray with non-stick paper.
Layout flat the puff pastry sheet on top of the baking paper. Lightly brush the pastry
with 1 tablespoon of the olive oil.
Layout three rows of 12 cheese slices and 12 tomato slices, alternating as you go and overlapping slightly ensuring you leave a 1⁄2
- 1 inch gap/border around all sides.
Once all three rows are done, drizzle over the remaining olive oil and sprinkle over the parmesan cheese.
Bake in the oven for 30 – 35 minutes or until golden.
Remove from the oven and sprinkle over the fresh basil leaves. Slice and serve immediately.
